Sweet Potato Pie

1 frozen pie crust
1 1/2 cups cooked, peeled and mashed sweet potatoes
1 heaping teaspoon all-purpose flour
1 cup milk
1 cup sugar
3 egg yolks
1 teaspoon vanilla
1 teaspoon ground nutmeg
2 tablespoons margarine, melted
small marshmallows for topping


The day before you make the pie, wash the sweet potatoes. Wrap each one in aluminum foil, and place on a foil lined baking sheet. Cook until very soft to the touch usually about an hour, but will be more or less depending on the size of the potatoe). You will know when they are done when liquid starts coming out (which burns and smells ... telling you they are done). Note - not all the potatoes will need the same amount of time. Smaller potatoes will need to be removed first, and bigger ones kept in until done.


When the potatoes are cooled, the skins should easily slip off.


Preheat oven to 350


Mix all ingredients together using mixer. Pour into defrosted pie crust, wrap the edges around the pie with aluminum foil to avoid over browning. After about 30 minutes, remove the foil along the edges and bake for approximately another 15 minutes (45 minutes total). The pie will be done when the pie crust edges are brown and the middle is fairly firm.


This can be made in advance. Add small marshmallows to the top and brown before serving.
